Okinawan Sweet Potato Mochi Pancakes

Nowadays, ube is everywhere! In fact, Trader Joes recently launched an ube mochi pancake mix. Until a couple of months ago, I assumed ube was the same as Okinawan sweet potatoes but they are different! Ube is a purple yam with darker colored skin, and Okinawan sweet potato is a sweet potato with light-colored skin. Since I grew up eating Okinawan sweet potatoes, I decided to put a spin to Trader Joe's ube mochi pancakes. Also, this recipe is vegan, inspired by Tasty


 Ingredients 
Pancakes
1/4 cup all-purpose flour
1/4 cup mochiko flour
1 tablespoon sugar
1/2 tablespoon baking powder
1/4 teaspoon salt
1/2 cup soy milk 
2 tablespoons of Okinawan sweet potato puree
1/2 tablespoon apple cider vinegar
1/2 teaspoon vanilla
Maple syrup or coconut syrup, to serve

Sweet potato puree
1 small Okinawan sweet potato
2 tablespoons, coconut milk or water


Instructions

Pancakes

  1. Combine and mix all dry ingredients (flour, sugar, baking powder, salt) in a bowl
  2. In a separate bowl, mix sweet potato puree and milk
  3. Combine and mix rest of the wet ingredients with the sweet potato/milk mixture 
  4. Combine wet ingredients with the dry ingredients
  5. Stir until everything is mixed together - but do not overmix the batter! The matter should have a lumpy consistency. 
  6. Let the batter sit for 5 minutes
  7. Heat up the non-stick pan to low-medium heat
  8. With a 1/4 cup measuring cup, scoop the batter onto the pan
  9. Wait for the little air pockets to form on the pancake, then flip the pancake
  10. Cook the pancakes for a couple of minutes and then plate them
  11. Drizzle pancakes with maple or coconut syrup

Sweet Potato Puree
  1. Steam the sweet potato for about 30 minutes
  2. The recipe only calls for 2 tablespoons of puree. I recommend slicing the sweet potato and using a couple of slices for this recipe. For the two slices, remove the skin of the potato
  3. In a bowl, mash the potato with your liquid of choice (coconut milk or water)
  4. Mash until the potato is smooth
