Chinese Chicken Salad

Ingredients
Dressing
1/4 cup sugar
3/4 cup rice vinegar
1/4 cup sesame oil
3/4 cup canola oil
1/2 tablespoon pepper
1 tablespoon salt
Wonton strips
Wonton wraps, cut into 1/2 inch thick, 2 inch long strips
Kosher salt
Canola oil for frying
Salad
1/2 head iceberg lettuce, chopped
Skinless chicken breast, boiled and shredded
Wonton strips
Slivered almonds
Instructions
Dressing
- Combine all ingredients in a mason jar and shake until all ingredients are mixed well.
Wonton strips
- Heat canola oil to 350 degrees Fahrenheit in a pot
- In small batches, fry the wonton strips for a few minutes or until they are a light golden brown
- Line a plate with paper towel to soak up the excess oil
- Use a strainer to take out the wonton strips and place wonton strips on the plate
- Sprinkle kosher salt on the wonton strips
Salad
- Combine the lettuce, shredded chicken breast, and slivered almonds.
- Toss until everything is well mixed.
- Sprinkle wonton strips on top
- Drizzle salad dressing
*Note - The lettuce and wonton strips tend to wilt when they're soaked in dressing for longer than an hour. I recommend setting aside dressing and wonton strips from the combined lettuce, shredded chicken, and almonds until you're ready to consume the salad.
