Kalbi

Kalbi Meat me in paradise I currently live in an apartment and do not own a grill. As such, this recipe provides instructions for oven-cooked kalbi. If I have a grill in the near future, I will update this recipe to include grilling instructions as well! Inspired by: Food Network Ingredients 2 lbs beef short ribs 1/2 cup brown sugar 1/2 cup soy sauce 1/4 cup water 1/8 cup mirin 1/2 yellow onion, sliced 1" long 2 cloves garlic, minced 1 tablespoon sesame oil 1/4 teaspoon black pepper 2 stalks green onion (separate the greens from whites) Instructions Rub an even coat of brown sugar on the ribs In a bowl, combine brown sugar, soy sauce, water, onions, mirin, garlic, sesame oil, black pepper, and the whites of the green onions. Stir until brown sugar is dissolved.  Place the beef in a flat container and add marinade into the container.  Let the meat marinate for at least 4 hours (some recipes recommend overnight marination), flipping the meat several times. Shoyu Chicken Winnah winnah chicken dinnah Inspired by: Hawai'i Magazine Ingredients 1/2 cup shoyu (preferably Kikkoman) 1/4 cup water 3 pieces ginger, sliced 1 clove garlic, crushed 1 tablespoon Mirin 2 lbs chicken thighs 2 stalks green onions, chopped (separate the whites from the greens) Instructions Add the shoyu, water, ginger, garlic, mirin, chicken, and whites of the green onion into a pot Bring to a boil Lower to medium heat and cook for at last 30 minutes or until thoroughly cooked Garnish with the rest of the green onions

Hurricane Popcorn

Hurricane Popcorn It will hit you like a hurricane For this recipe, I prefer to pop my own popcorn because it's easy to make and I can control my salt consumption. All you need is a 2-quart stainless pot and the ingredients listed below.  Note clarified butter is essential to making butter popcorn. Clarified butter is the separation of water and milk solids from butter, giving you solely butterfat. Ghee is a great alternative to clarified butter. If you do not have clarified butter and ghee in your kitchen, I recommend looking at the  All Recipe Instructions to clarify butter. Ingredients 2 tablespoons coconut oil 1/4 cup corn kernels 3 tablespoons of clarified butter Nori komi furikake Kaki mochi (I recommend Tomoe)  Instructions On medium heat, pour coconut oil in the stainless pot.  Add 2-3 corn kernels in the stainless pot and wait for the kernels to pop Once the kernels pop, add the rest of the kernels in the pot Close the lid and occasionally shake the pot eve...

Chicken Long Rice

Chick en Long Rice for the local soul.... Inspired by: Foodland Ingredients 4 ounces bean thread noodles 5 long slices of ginger 2 cloves garlic - smashed (not chopped) 6 stalks of green onion, chopped. (separate the whites from the greens) 4 cups chicken broth (or 1 Costco chicken broth carton) 3/4 lbs chicken thighs (I've used chicken breasts too) 1 tablespoon shoyu 1 teaspoon salt Instructions Soak the bean thread noodles in warm water for 30 minutes In a sauce pan, add chicken stock, ginger, garlic, and whites of the green onion Add chicken to the pot. Add salt to the broth mixture. Simmer the broth uncovered until the chicken is cooked. Skim the fat while the chicken is cooking.  Remove the chicken from the pot. Once cooled, shred the chicken (remove/discard skin and bones, if any).  Drain the bean thread noodles and add them into the broth. Cook the noodles until they are translucent.  Add the chicken and the rest of the green onions. Adjust broth by adding shoyu....
