Okinawan Sweet Potato Mochi Pancakes No one stacks up to you Nowadays, ube is everywhere! In fact, Trader Joes recently launched an ube mochi pancake mix. Until a couple of months ago, I assumed ube was the same as Okinawan sweet potatoes but they are different! Ube is a purple yam with darker colored skin, and Okinawan sweet potato is a sweet potato with light-colored skin. Since I grew up eating Okinawan sweet potatoes, I decided to put a spin to Trader Joe's ube mochi pancakes. Also, this recipe is vegan, inspired by Tasty .
