Portuguese Bean Soup

 Portuguese Bean Soup I bean thinking about you Courtesy of my mom! My mom is an exceptional cook! I like to think the apple does not fall far from the tree. 😉 As temperatures drop, all I want to eat is Portuguese bean soup, a hot savory bowl of ham, autumn-like vegetables, macaroni, and of course, Portuguese sausage. Luckily, this ono recipe has only two steps. The obstacle is time, as the first step requires you to simmer ham shanks for two hours. However, an instant pot can reduce the time commitment. If you plan to use an instant pot for the first step, choose the “manual” setting, set the time for 45 minutes, and apply the natural release.  Ingredients 2-3 ham shanks 10 oz.  Li Hing Mui Margarita Don't be sour, unless you're a li hing mui A homesick remedy for any local living in the mainland. This margarita reminds me of those li hing mui ice cups we would have after elementary school. Now, I’m drinking adult “ice cups” that contain tequila and orange liqueur. A friend, who often makes homemade margaritas told me fresh lime juice is a necessity. Li hing mui and lime is a great combination, and I would also recommend using fresh lime juice for this recipe.  Ingredients (2 servings) 3/4 teaspoon li hing mui (1/4 tsp for the rim, 1/2 tsp for the drink) 1/4 tsp Kosher salt 3 oz silver tequila 2 oz orange liqueur (recommend Cointreau) 2 oz freshly-squeezed lime juice (may need 1-2 limes) 1 tbsp simple syrup (see footnote) Instructions : With a lime wedge, rub the lime along the rim of the glasses.  In a small dish, mix the Kosher salt and 1/4 tsp li hing mui Rub against or sprinkle the mixture on the rims and set aside Combine tequila, orange li...

Stuffed Bitter Melon Soup

 Stuffed Bitter Melon Soup is Souper Duper Inspiration: Ngo Family When I was living in Hawaii, I would visit my husband's family for lunch on Sundays. My mother-in-law prepared phenomenal Vietnamese dishes, including stuffed bitter melon soup. The chicken stock and juicy pork softens the bitterness, but the bitter melon flavor is still transparent. I like to think this soup is medicinal as bitter melon is known for its many health benefits; as such, I love to eat this when I feel gross or unhealthy. If you want a strong kick of spice to clear the nostrils, add Thai chili peppers! Ingredients 2 bitter melons, chopped and shelled out 1/2 pound ground pork 1/4 cup wood ear mushrooms 1/2 bundle cellophane noodles 1 tbsp fish sauce 2 Thai chili peppers, minced ( optional ) 1/2 tsp salt 1/2 tsp pepper 32 fl oz chicken stock   1-inch ginger, sliced 1 bunch of cilantro, for garnishment   Instructions Slice bitter melons into 2-3" inch pieces.  Remove insides of the bit...
